Rye and Honey Biscuits with Ginger and Cinnamon


Delicious Swedish biscuits with ginger and cinnamon, flavors that you will not notice at all when they mix with the rye and the honey.

I am a big fan of chocolate biscuits, but these biscuits are really tasty.

Ingredients

170 g rye flour (brown or white)

90 g wheat flour

200 g butter

65 g sugar (brown if possible)

35 g honey

1 egg

3 g salt (1/3 tsp)

1 tsp full of powdered ginger

1 tsp full of powdered cinnamon

1 tsp baking soda.

 

Recipe

  1. In a bowl, mix the wheat flour, salt, ginger, cinnamon and baking soda.

  2. Add the melted butter, one egg and the honey. Using a wooden spoon, mix everything until it is well combined.

  3. Add the rye flour and mix well. The dough should look like in the picture.

  1. Divide the dough into two pieces. Roll each piece, creating the shape of a cylinder with 3 cm diameter. Wrap each cylinder in plastic wrap and reshape a bit more.

  1. Keep them in the fridge for 3 hours or overnight.

  2. Take the cylinders out of the fridge and cut them into slices about 1 cm thick. Place them on a baking tray with a cookie sheet.

  1. Bake for 15-20 minutes until they are brown on the sides. 175ºC (347ºF), heat above and below. Let them cool down and ready to eat.
