Yes, you are reading this right, vegan pie: without milk, eggs, cream... but equally delicious! I decided to make this pie for a group of people from India who were mostly vegan. It was a success! I recommend this pie also for the non-vegan people also!
Ingredients
Cream
3 cups flour
1 cup sugar
2 Ts powder yeast
1 Ts powder cinnamon
2 cups veggie milk (rice, almond, soya…)
Fruit
3 apples (pippin apple preferably)
1 lemon juice
Syrup
140 gr sugar
1 cup water
1 ts lemon
Pie Base
Puff pastry (without animal fats)
Recipe
For the Cream
In a bowl mix the milk and flour til smooth. Add the sugar, cinnamon and yeast. Cook on a low heat, stirring constantly until thickened.
Then put the mixture in a ceramic or glass bowl . Cover with film and reserve. For the Fruit
Peel the apples and cut them into thin slices. Put them in a tray and pour the lemon juice on top.
For the Syrup
Put the ingredients in a pot (water, sugar and lemon) and cook the mixture over medium heat, stirring constantly. Let boil for 2 minutes and turn off the heat . Allow to cool.
Pie Preparation
Roll out the puff pastry dough into a greased tin (also on the sides of the tin).
Spread the cream over the dough.
Place the slices of apples on top.
Pour the syrup over the apple.
Put into a pre-heated 356ºF (180ºC) oven for 35 or 40 minutes, til the apple is browned.
