This delicious almond cake is named in honor of Santiago (St. James), the patron saint of Galicia.
Ingredients
250 gr almond meal
250 gr sugar
5 eggs 1 teaspoon ground cinnamon
Zest 1 lemon
Butter or oil to grease the pan For the decoration:
Icing sugar

Recipe
Preheat the oven to 180°C.
Grease a 20cm cake pan with butter or oil.
In a large bowl mix the eggs, the sugar and the almond meal. Add the lemon zest and the cinnamon.
Pour everything into the cake pan and bake for 30 minutes.
To check if the cake is done, place a knife into the cake and pull it back out. If it comes out clean, then the cake is done. If not, bake it some minutes more.
Leave it to cool down. For the decoration, place the printed drawing on top of the cake and dust with icing sugar to serve.
